All of our honey comes from hives on the Missouri side, south of the river and within 20 miles of our farm in Raytown. The hives our honey is harvested from are in urban populated area that are set against the rivers (including the little blue river), local forest and prairie. The honey tastes as complex as it's surroundings! Although our honey varies in flavor based on the season it's harvested in and the year our honey is generally amber-dark, nutty and complex.
About 75% of the honey consumed in the United States is imported. Other countries don’t have the same regulations and care for the bees/ quality of honey as we do. Also, honey is the 3rd most fraudulent food consumed in the United States!! Buying local honey from local beekeepers guarantees that you are getting a good quality product. Also, it is common for folks to want local honey for pollen allergies.
Raw honey will crystallize sooner than pasteurized honey. It's perfectly good to eat once it gets crunchy, but if you don't like the texture, simply put it in a warm - lightly simmering water bath until it runs smooth again. If your honey crystallizes within 6mo and your customers do not want to purchase it that way, contact us. We can schedule a time for you to bring it back to the farm and swap it out for some "runny honey". Crystallization is a sign of GOOD HONEY, but might not sell as well because of customers’ expectations (they are used to pasteurized honey).
Most of the honey sold in stores has been heated and pasteurized. This processing destroys many of the enzymes and beneficial compounds that make raw honey so nutritious. Regular honey often looks clear and syrupy. Raw honey has not been treated with high heat and is completely left in its natural state and therefore contains pollen, enzymes, antioxidants and many other beneficial compounds. The nutrient content of raw honey varies, but a 1-ounce serving contains very small amounts of folate as well as vitamins B2, C, B6, B5 and B3. Minerals including calcium, copper, iodine, iron, magnesium, manganese, phosphorous, potassium, selenium, sodium and zinc. Neat!
